Tofu scramble & Potato Hash

One of my favorite morning meals can appeal to college students and LA housewives alike; it is easy on everyone’s schedule, budget, and waistline.

This meal costs $1.75 per person.

You read that right.

It is savory, filling, plant-based, and made with whole vegetables that will nourish your day.

Note to carb- phobes: Potatoes, when cooked properly are great for providing energy to the body. They contain high amounts of vitamin C, fiber, and potassium. Eaten in moderation and with a proper balance of fats and vitamins, carbs are essential for providing your body and mind the energy it needs to sustain itself.

Ingredients:

(serves 2 people)

Produce:

2 small red potatoes ($.75)

1 small Yukon gold potato ($.50)

.25 lbs Crimini mushrooms ($1.25)

Protein:

Half a block of firm tofu ($1.00)

Oils & Spices:

2 tbsp olive oil

1 tsp smoked paprika

1 tsp red chili pepper

1/2 tbsp garlic salt

Salt & pepper to taste

Instructions:

  1. Prepare produce and tofu.
  2. Heat up oil. Throw in potatoes, add spices, cook until soft. Gradually add water if potatoes stick to pan.
  3. Saute tofu and mushrooms with spices in a separate pan for about 7 minutes.
  4. Bam, done! Enjoy your meal.
